About our Chef,
Palmer Golsen.
At the age of thirty one, Palmer Golson already has a
lifetime of restaurant experience. As the son of Charlie Golson, Palmer
started lending a hand in the kitchen of Charlie’s L’etoile Verte at a
young age.
His love for wildlife and the outdoors took him to
Clemson University where he earned a degree in Wildlife and Forestry
Management. Upon graduating, Charlie was in need of a head chef. Palmer
took over the kitchen in 2003, and has remained the head chef since
then.
His love of South Carolina’s natural resources make
him ever conscience of the products he serves at Charlie’s. Although
Palmer has no formal training, his acquired knowledge and meticulous
sense of organization make him a top chef.
